Remove em dashes from the docs, reuse $TOKEN too not just $SECRET

Style fix across all doc files: no more em dashes, replaced with
periods, commas, or colons depending on what the sentence needed.

Also closes a gap in the same spirit as the $SECRET fix: the Telegram
setWebhook/getWebhookInfo commands still had <TOKEN> as a manual
retype, and Discord's register-commands step had DISCORD_TOKEN and
DISCORD_APPLICATION_ID typed a second time despite already being
entered in the step right above it. Both now use shell variables set
once and reused everywhere they're needed on the page, same pattern
as the webhook secret fix.
